Dairy product production ends year lower

Dairy product production continued lower during December with powders seeing large declines.

Total cheese production was 1.16 billion pounds, down slightly on the year and three percent from the prior month. Italian cheese production was up more than one percent on the year and down about one percent on the month while American cheese was down about a percent on year and 4.5 percent higher than November.

Butter production totaled 180 million pounds, down more than 13 percent from the prior year while up more than 15 percent from the month before.

Nonfat dry milk was down 20 percent from 2020 and skim milk powder was down nearly 25 percent.  Dry whey production was five percent lower while lactose was up slightly more than two percent from the previous year.
