Meat alternatives tasting more like beef, nutrition difference remains

Mark Russell tells Brownfield the difference becomes noticeable when comparing nutritional value, calling beef one of the most powerful foods.

“Ten essential nutrients packed into a very small, three to four ounce, patty of beef…,” Russell said. “Some of those nutrients in beef are more bio-available and can be absorbed better than any other source, iron in particular.”

He cautions consumers against making purchasing decisions based on an item’s front label.

“I had two side-by-side packages that said beef patties,” he said. “And when you flipped it over on the backside, one was 100 percent beef and the other one had soy protein and soy protein isolates, as well as several other things, but on the front of the package it said beef patties.”

Russell said he hopes to shape consumer preference from a young age with programs like MO Beef Kids that works to get beef in schools.
