Dairy product production trending lower
Most dairy product production was down on the year for the month of August while cheese saw a slight increase.
Total cheese production totaled more than 1.14 billion pounds, up 4.4 percent on the year and marginally below the prior month. Italian cheese production was up nearly nine percent on the year and slightly on the month while American cheese was up 1.5 percent on year and down slightly more than three percent for the month.
Butter production totaled 148 million pounds, down nearly two percent from the prior year and down 1.5 percent from last month.
Nonfat dry milk was down 17 percent from 2020 and skim milk powder was down nearly 13 percent. Dry whey production was down three percent while lactose was down more than five percent from the previous year.
